Description

In a 3 year cross-sectoral project supported by the VELUX FOUNDATION, we intend to conduct a qualitative study of participatory research design on the best practices to minimize food waste related to public food procurement. Our focus will be on the massive amounts of food wasted before the food produce reaches the public kitchens. The project group consists of a unique partnership between Copenhagen Municipality, Roskilde University and the wholesalers Hørkram Foodservice A/S and Dansk Cater A/S.
