The agriculture in Denmark has undergone several structural changes, in the last six decades, which has contributed to a concern among the small productions. Ma-ny of them have to step up their productions methods, in addition to a lot of the Danish farms expand. The Danish agriculture sector exported for more than 615 billion DKK in 2014. These structural changes affect the local areas. One of these places is Lammefjor-den in Odsherred. Lammefjorden, is among the population known for their quality branded potatoes and carrots. Lammefjorden’s niche manufacturers face in these years several economic challenges, as the trend tends towards greater and intensi-fied farms. This project is examining, the influence made by the agriculture, on local niche manufacturers. This is viewed by using the socio-technical system analysis, in ad-dition, we choose to apply theory concerning experience economy to get an under-standing of how the small niche manufacturers can compete with the big farms.
