Abstrakt

1 Abstrakt Formålet med dette projekt er at undersøge, om det er muligt at klassificere forskellige druetyper i rødvine ved hjælp af kemiske analysemetoder som ultraviolet/visuel spektroskopi, UV/Vis, infrarød spektroskopi, IR, og high performance liquid chromatography, HPLC. Problemstillingen er blevet belyst ved hjælp af forsøgsresultater fra eksperimenter på Nationallaboratoriet for Bæredygtig Energi på Risø DTU og Roskilde Universitetscenter, samt ved litteraturstudier. I projektet undersøges fire forskellige rødvine for at identificere forskellene mellem druetyperne, Cabernet Sauvignon, Malbec, Merlot og Pinot Noir. Der gennemføres en række eksperimenter ved brug af metoderne UV/Vis, IR og HPLC, hvor UV/Vis-testene blev udført med ikke pH-justerede og pH-justerede vin. Derudover udføres reproducerbarhedstest og en subjektiv vurdering af vinene. Afslutningsvis afprøves UV/Vis-resultaterne ved udførelse af blindtest på en ny Merlot vin fra et andet kontinent. Det kan herved konkluderes, at det er muligt at skelne mellem druetyperne ved hjælp af HPLC-spektre. Ud fra analysemetoden UV/Vis kan de fire vine klassificeres efter druetype ved brug af computerbaseret dataanalyse. IR-spektrene viste ingen signifikant forskel mellem vinene. Resultatet af blindtesten viste tendens til bedre klassificering af vine ved pH 4,5. 2 Abstract English title: CHEMICAL ANALYSIS OF RED WINE The intention of this project is to investigate the possibility of classification of different types of grapes in red wine by the means of chemical analysis such as ultraviolet/visible spectroscopy, UV/Vis, infrared spectroscopy, IR, and high performance liquid chromatography, HPLC. The query was clarified through experimental results obtained at The National Laboratory for Sustainable Energy at Risø DTU and Roskilde University and by literature studies. Four different kinds of grapes in red wine were examined with the aim of locating any significant differences in their composition. The grapes are Cabernet Sauvignon, Malbec, Merlot and Pinot Noir. A series of experiments were performed, using the methods UV/Vis, IR and HPLC. The experiments involving the UV/Vis method were performed at various pH-values. Also a reproducibility test and a subjective visual assessment were performed. At the end of the experimentations the UV/Vis results were tested by performing a blind test with a new Merlot wine from a different continent. The conclusion is that it is possible to identify differences in the HPLC spectra. By use of UV/Vis analysis and computer based data processing it is possible to classify the four types of grapes in red wine. The IR spectra did not show any significant differences among the wines. The results of the blind test showed a tendency towards a better classification of wines at pH 4.5.
