Min forskning fokuserer på det der internationalt betegnes som "Food Studies, Food Systems & Food Policy" områderne. Det er især de moderne praksisser inden for de komplekse og koblede systemer af aktører og artefakter i landbrug, fødevarer, måltider og gastronomi der gennem mange år har haft min forskningsmæssige interesse. Og mere specifikt er jeg optaget af at forstå og forklare hvilke mekanismer der er i spil i forbindelse med de store samfundsmæssige udfordringer med at omstille disse systemer til mere bæredygtige, økologiske og klimavenlige praksisser.
Jeg har en interdisciplinær baggrund og trækker på sociologiske, antropologiske, politologiske og teknologiske teorier og metoder. Det har jeg gennem mange år benyttet til at undersøge fødevaresystemets synlige og usynlige praksisser i de mange forskellige typer af organisationer og netværk som karakteriserer et af samfundets mest centrale systemer og som sikrer befolkningens daglige kost.
Jeg har gennem årene gennemført en række store og mindre forsknings- og udviklingsprojekter (støttet af EU gennem FP6, FP7, H2020, gennem nationale fonde, mv). For tiden gennemfører jeg sammen med 19 partnere et stort studie for EU om hvilke nye kompetencer og områder EU skal støtte for at sikre en bæredygtig omstilling i landbrugs- og fødevaresystemet: NEXTFOOD-project.eu. Tidligere har jeg stået i spidsen for udviklingen af kandidatuddannelsen Integrated Food Studies og indtil for nylig har jeg på Umeå Universitet udviklet et forskeruddannelsesprogram inden for det gastronomiske felt.
