Sevasti studied Economics at the University of Macedonia, Thessaloniki, Greece. She continued her studies, Masters of Science in Agricultural Economics,  at the Department of Agricultural Economics, University of Saskatchewan , Canada where she also worked as a Research Associate.  In 2000, she joined the Postgraduate Program in European Studies, at Aalborg University.  Meantime, she worked as a Research Assistant at the Royal Agricultural University, Copenhagen, in Denmark (Life, Copenhagen University today).   

In January 2004, she started her Ph.D. at the Department of Social Sciences, Roskilde University with the title:'Factors of Europeanisation, The case of the CAP-Denmark Greece compared'.

She was a visiting researcher at the Department of Political Science, University of Berkeley, USA from August 2005-July 2006.

Sevasti's research interests concentrate on two broad areas First, the EU institutions and public administration with respect to science based policy making areas with an emphasis on food, agriculture and chemicals. Second, on the Europeanisation and transnationalisation of social movements as a response to austerity and Eurozone crisis.   

Since January 2015 she is an Associate Professor at the Department of Society and Globalisation, Roskilde University.
